Sesame Lotus Root Soba Noodles (Serves 4-6)

According to the Chinese, lotus root is good for the appetite, and helps clear excess heat from the body. Lotus is rich in iron, vitamin C and the B’s. Bottom line? Lotus root soba are delicious, with an earthy flavor which is unique. Feel free to use your favorite variety in this simple, satisfying side dish.

Ingredients:
1-8 ounce package lotus root soba noodles
1 cup julienne (sliced) snow peas
1 cup julienne (shredded) carrots

1 ½ tablespoons toasted sesame oil
2 tablespoons low sodium tamari or soy sauce
1 teaspoon sambal chili paste (optional)

For Garnish:
1 tablespoon black sesame seeds
1 scallion, green part only, chopped fine

Preparation:
Cook soba according to package directions. During the last minute of cooking, add vegetables and cook until snow peas turn bright green. Drain soba and vegetables and shock in cold water to stop cooking. Return noodles to pan and toss with oil, tamari, and sambal. Mix well, and either plate individual servings or family style. Top with sesame seeds and scallion.
